2012 Time for Time
In winemaking one must take “time for time.” This is the philosophy that guides the production of our extended élevage Syrah. Time for Time is the best-kept secret at Refugio Ranch. What began as a wild card experiment with one barrel from the 2011 vintage, this program has evolved into our most exclusive and premium wine. This extended 40-month barrel aged syrah exhibits both concentrated fruit, dried violets, sweet baking spices, and secondary, more savory elements of black olive, balsamic, smoky bacon, cocoa nibs, and coffee bean. Wonderfully polished and balanced on the palate after a lengthy rest in large format 300L barrels, 100% French oak (50% new). Only 2 barrels produced!!
Soil Types: Linne Clay Loam - this whitish gray soil contains limestone pieces beginning 18”-24” below the surface. The presence of limestone captures and preserves the freshness in this wine, and being a heavier soil lends itself to a rounder mouthfeel.
